Thanksgiving has always been my favorite holiday. As a child I spent, like many do, Thanksgiving surrounded by lots of family creating delicious dishes and even better memories. I love me some food and particularly scrumptious holiday foods that bring back those wonderful memories. As I've grown older, our family dynamics and relationships have changed and our holiday dinners typically include just our immediate family. NOW, my relationship with food has changed as well and I am feeling like I may need to dub another holiday my new favorite going forward.
I am not cooking much this year. We have ordered a smoked turkey, some sides, and rolls from Dickey's BBQ. Christian (my 20 year old son) is a manager there and we agreed it would make for a low maintenance Tday dinner so I wouldn't need to worry about preparing a bunch of food I wouldn't be eating. I'm looking forward to grubbing on some yummy turkey and green beans. I like my homemade green beans a little more but, we eat mine fairly often so this will do.
Sheilynn (my 18 year old daughter) is not a turkey fan, so I'll get a little ham to prepare as well. I don't typically make or bake Keto friendly substitutes for non essential foods, but I did find a festive recipe I'm going to try since it's a "special occasion."

I am looking forward to NOT feeling stuffed and sick tomorrow from overeating. I DO NOT miss that feeling at all. I hope you all have a wonderful, safe, happy, and HEALTHY Thanksgiving. I am very thankful to have finally found myself on this journey for good.
